只要你坐定, Giorgio 準叫你味蕾大開。 自己的選擇,自己的人生。 — 梅若史翠普 主廚 Giorgio Pappalardo 在台灣擁有多重身分。他是Osteria by Angie 道地義式料理精緻連鎖餐廳的負責人兼總監、純自然釀造酒進口公司 The Warehouse 以及廚藝學校 Skills 的創辦人,同時也是廣受歡迎的食譜「簡單, 就是最好的味道」的作者。 Giorgio 是個值得年輕人效法的對象。   我很榮幸也很高興在本月上旬的一個星期三下午訪問到 Giorgio 。當日的天氣陰暗,但我卻心情愉快, 原因是我與這位謙虛、幽默、務實的主廚兼餐廳業主融洽訪談之後,我深受啟發。 Giorgio 小時候在學成績並不好,他說:「我什麼都喜歡,就是不喜歡唸書」。後來,他發覺自己對膳食懷有無比的熱情。Giorgio 的母親注意到 Giorgio 對於料理的天份和嚮往,就鼓勵他就讀餐飲學校,結果他的人生從此完全改觀。「我通過了入學考試,但我今天還是搞不懂當初是怎麼辦到的」,Giorgio 笑了出來。   畢業、服完兵役後,  Giorgio 遇到了第二個改變他人生的機會:亦即有幸在 Alain Ducasse 旗下工作四年。Alain Ducasse 是極少數獲得米其林贈星的主廚,他也是 Giorgio  學習的榜樣和靈感的來源. 回顧過去,Giorgio 了解到與 Alain Ducasse 共事的那段期間才是他廚師生涯的轉捩點,因為他的廚藝從那之後便開始進入一個更精緻的境界。  Giorgio 展示他做學徒時的照片。 他娓娓道出照片之後的故事,指出這張照片對他而言深具意義。   跟 Alain Ducasse … Continue reading
